Sometimes I have recipes on my 'to develop' list for months or even years. Sometimes one comes into my mind and I just need to make it right now. The latter happened last week. I had past-prime bananas and - like many of us - was wary to dip into my precious stash of eggs. I’d been wanting to make a banana bread variation for a while, and the idea of crumb muffins felt like the warm hug we collectively need right now.
So, make the muffins, drop one off at your neighbor and spread a little love. Sit back, eat one, and feel COZY. These are great warm, at room temp, lathered with peanut butter and chia seeds, or sliced open with a pat of butter.
Making your own muffin liners
No eggs and now this?! We’re feeling SO thrifty today.
I haven’t purchased muffin liners in at least 5 years. I take out my trusty parchment paper, cut it into squares that are an inch wider than the muffin cup. Then make a half-inch cut in the middle of each side of the parchment. Now it’ll nestle right into the muffin tin!
When I shot the muffins, I didn’t make tall enough liners, so they bubbled over the side of the tin and turned out a bit squat. Make sure to go about an inch wider - the parchment should pop above the edge of the cup when you put it in! (why does this feel so sensual to write)
